I think it is time to grow some pea shoots and lettuce, the warmer temperatures have me craving crunchy salads for every meal. After a tasty Popeye’s salad at Victoria’s Pagliacci’s over the weekend, I started thinking about all the summer classics and one-offs from last season to bring back into the repertoire. Like this gorgeous heirloom tomato and watermelon salad or a classic strawberry/goat cheese/poppy seed combo. Better yet, pistachio and beet salad or this sexy roasted carrot and avocado mix with orange/lemon dressing. Everything sun-kissed, ripe and crunchy. You name it (candied pecans, grapefruit, dried cherries, mint, maple syrup), it will make its way into my salad bowl. And I bop along to Yukon Blonde while I mason jar my dressing. What is your favourite toss-up or kitchen sink classic?

Papaya & Avocado Salad

¼ cup sugar
½ tsp dry mustard
2 Tbsp papaya seeds
½ cup white wine vinegar
½ cup olive oil
2 green onions, finely chopped

1 ripe papaya, peeled and sliced
1 avocado, peeled and sliced
1 head romaine lettuce
1 red onion, thinly sliced
salt to season

Combine dressing in a blender until papaya seeds have the appearance of ground pepper. There should be enough dressing to make this salad again. Toss lettuce with ample dressing. Arrange avocado, papaya and onion on top. Serves 6 – 8.
